Turkey meatloaf muffins

You will need :

  • 2 lbs lean (or extra-lean) ground turkey
  • 1 cup all-natural salsa (go with your favorite “heat” level)
  • 1 cup whole wheat bread crumbs
  • 2 large eggs, lightly beaten
  • 3 cloves garlic, finely chopped
  • 1 tsp. sea salt (or Himalayan salt)
  • ground black pepper, to taste
  • fresh chopped parsley, for garnish (optional)

Preparation

  1. Preheat oven to 375F.
  2. In a large bowl, combine turkey, salsa, bread crumbs, egg, garlic, salt, and pepper.
  3. Press mixture in a 12-slots muffin pan, distributing evenly.
  4. Bake for 60 to 70 minutes or until center is no longer pink and meat is cooked through.
  5. Let stand 10 minutes before serving. Serve garnished with parsley.
